Egg scrambled veggies & garlic bread sticks

Egg scrambled veggies:

Sauté carrots, onions, corn, chillies, cilantro and coconut flakes for five minutes in olive oil or butter. Add egg white and sauté for few more minutes. Add salt and pepper to taste! I am going to try this recipe again! It tasted great and is healthy too!!

Garlic bread sticks:

Toast two breads. Cut them into 3-4 inch long slices and sprinkle garlic dipping sauce (or make your own flavored butter).

Have a great week ahead!

Spicy Spaghetti & Garlic Mushroom

Oven roasted mushroom
Recipe for Garlic roasted mushroom:
(Recipe I found on Facebook )

You need:  16 mushrooms whose stalks are cute evenly,
3 tbsp corn or vegetable oil, (I used 2 spoons of vegetable oil)
1/4 c unsalted butter, softened  (I added about 4 spoons of butter),
3 cloves garlic, chopped very finely,
2 tbsp fresh thyme, chopped (I did not add this),
1 1/2 tbsp lemon juice
Salt and freshly ground black pepper to taste
1/4 c fresh breadcrumbs (I blended garlic croutons and used it as bread powder)
 Directions:
Preheat the oven to 200C/400F/gas mark 6. Lightly fry the mushrooms, cap-side down, in hot oil for 20 seconds.Arrange the mushrooms in a shallow roasting tin with the stalks facing upwards. Mix together the butter, garlic, thyme, lemon juice and seasoning. Spoon a little garlic butter on to each mushroom, then lightly press the breadcrumbs on top. Either refrigerate for later use, or cook immediately in the oven for 10 minutes.

I added more bread powder than was needed,  yet the mushrooms tasted good! I might try this recipe again, this time using chicken instead of mushrooms and see how it turns out!

I am real bad at writing recipes. I hope you do not have a hard time deciphering it.
Enjoy your day!

3. Coat with olive oil.
4. Place the tray in an over for ten minutes at 420 degree fahrenheit.

I hope you enjoy making this, as much as I did.

Feta lettuce salad

3 cups of romaine salad
1 spoon of bold and creamy jalapeño sauce (Taco Bell)
1 spoon of feta crumbled cheese with Mediterranean herbs
1 spoon of shredded cheddar jack cheese
1 spoon of olive oil
6-7 plain croutons

Toss them all together and serve. Feta cheese gives a strong and distinctive flavor to the salad.

This salad has approximately 200 calories. If you want to make it healthier, add all the ingredients except the lettuce in moderation.

Raspberry-banana smoothie!

Recipe: One frozen banana + one cup of frozen raspberries + one cup of unsweetened almond milk + one spoon (or two ;) ) honey and blend it together!

Banana is a good source of potassium, dietary fibre, manganese and vitamins B6 & C with great benefits for the heart!

Raspberries are a good source of vitamin C, manganese, fibre, vitamin K, omega 3 fats, copper, vitamin E, potassium and folate with anti cancer benefits!

Honey prevents heart disease and cancer, is anti bacterial, anti fungal, reduces ulcers, is a probiotic and more!

Almond Milk is rich in calcium and boosts bone health and also has lesser calories than cow milk. It is also a good source of vitamins and minerals, antioxidants and is heart healthy.

Tastes sweet and banana-ish with a slight texture of crunchiness!

Ps: I am becoming an expert smoothie maker!

What makes me good cook ...

When I told momma the ingredients I used to make 'chutney'. She said adding random ingredients and blending them together along with a generous amount of chilli powder isn't the recipe for chutney. :( I felt.

But today when I served my so called chutney to Ani, he came back to me asking for a second serving saying that the "chutney" was really good!

Lesson learnt: starving someone and then feeding them with my innovative recipes makes me a really good cook!
